Kale & Quinoa Salad

Ingredients:

1 package Circle A Farms Hydroponic Baby Kale
1/2 cup quinoa (keen-wha), cooked and cooled
1/4 – 1/2 cup feta cheese, crumbled
1/4 – 1/2 cup sweetened, dried cranberries (Craisens)
1/2 sliced almonds or chopped walnuts, toasted
1/8 cup red onions, thinly sliced
Apple Cider Vinaigrette by Southern Comfort Foods

Directions:

Tear kale leaves into bit-sized pieces. Toss with dressing until leaves are coated and shiny. Mix in remaining ingredients and toss well. Adjust ingredient amounts according to personal preference.
